When I enter a trade, I place a stop order and target order. Let's say I am long 5 contracts and place a target 2pts away from entry price.

How can I alter the target to sell 2 contracts at 1 pt, 2 contracts at 1.5pts and 1 contract at 2.5 from entry price?

How about using a Stop / 3T position type so that NT submits 3 targets instead of 1?
